In my household we tend to do Thanksgiving a little differently. I don't like turkey but the rest of the family loves it. So, we tend to fix BBQ or chicken, something different so that I can enjoy it will the rest of the family.  This is where Pig of the Month comes in!

We take the most tender, well marbled pork we can find from pasture raised all natural pigs and brine with sea salt and spices and herbs like juniper berry, all spice, cloves, garlic, and peppercorns.  After a nice long bath to keep it moist while smoking, we throw it over fruit and hickory woods and slow smoke it to perfection.
It's spiral sliced, and fully cooked, so all the hard work is done for you -- you just sit back, add some sides, and dig right in!
